SUPERHERO OMELETTE

Feeling a bit nauseous just by a thought of a busy and ultra-demanding day ahead? You are about to start one of those days when only superhero powers would get you through? Hey, chill down and relax! I have a perfect quick fix energy solution to make you fly all the way with a very big smile on your face. Trust me, no day is a tough day when you start it with my superhero omelette!

Main inspiration for this dish was my aunt from the countryside, who still cannot get through the fact that somebody is able to function properly on a meat free diet. I still clearly remember our family Steven’s Day gathering last year. As it is tradition, table must be full of food, regardless of everybody already over exploding from the pre and Christmas day hedonism. Read – meat, meat, meat, accompanied by hearty side dishes such as ultra-creamy mashed potatoes and buckwheat mixed with the pork roast juice, Russian salad, at least two large trays of creamy homemade cakes… I said at least 2 trays of heavy cakes, but the 3rd one is there just to make sure that nobody stays hungry – God forbid πŸ™‚

So there is me, in a circle of my closest dear family, saying that I really still don’t eat meat, and am not planning to fill my plate with the rich main course selection. This time there was only a moment of silence, then my aunt stood up, and made an epic comment – β€œOK, I see, you are sticking to it. No problem, there is something quick I can surprise you with, meat free, no pigs fat involved, I promise.”

And indeed, literally 5 minutes later, she served me with this pile of scrambled eggs. Well, not your ordinary scrambled eggs as it turned out. I started tucking into this delicious silky meal, kept asking my aunt what was the secret. She kept smiling, being all happy I had been enjoying my meal. There was only one comment about the recipe – β€œIt is a secret, but the only hint I can give you is that I used polenta.

Whether it was milk, sour cream, or something 3rd that made it so fabulous, don’t really know up to this day. But hey, this gave me hell of a great idea to develop my own energy boosting delicious omelette with the twist I am sharing with you today.

My version is totally extended, still easy to make, and it guarantees 10 hours full belly with energy levels to get you through the toughest day you can imagine; mentally and physically.

All ingredients are so amazing and packed with goodness, consider each as a superhero on its’ own:
Eggs – quality protein, vitamin A, calcium and iron*
Polenta – quality carbs
Mushrooms – very low in calories, quality protein, vitamin C and iron*
Flaxseeds (linseeds) – rich in fibres, protein, calcium and iron*
Sesame – good oils, ultra-high in fibres, protein, calcium and iron*
Turmeric – calcium, iron*, anti-inflammatory, anti-oxidant

No day is a tough day with my superpower omelette feat. mushrooms, polenta, turmeric, flaxseeds & sesame seeds. High mental and physical energy levels throughout the day are guaranteed!

Servings: 1 person
Ingredients
  • 1 tbsp olive oil (sunflower or flaxseed oil is great alternative)
  • 2 medium to large eggs
  • 1 tbsp polenta
  • 5 larger mushrooms (cca. 120 g.)
  • 2 tsps salt
  • 1 tsp pepper
  • 1 tsp turmeric
  • 1/2 tbsp flaxseeds
  • 1/2 tbsp sesame seeds
Instructions
  1. Wash and finely slice the mushrooms. Set aside on a plate.

  2. Heat olive oil in a pan.

  3. While oil is heating, break two eggs in a bowl. Add polenta, 1 tsp of salt, pepper and turmeric. Whisk all well and set aside.

  4. Once oil is heated, add sliced mushrooms, flaxseeds and sesame seeds.

    Stir fry on a medium to higher heat until all the water from mushrooms evaporates and they start getting a nice brown colour.

  5. Pour in whisked eggs and reduce heat to medium.

    When edges start getting a bit firm, swirl them gently with the spatula towards centre of the pan, allowing non fried liquid to spread around the pan smoothly.

  6. Soon enough (literally under a minute), the whole mixture will start getting firm. Once this happens, take the pan off the fire, and start serving immediately.

Recipe Notes
  • Spinach or Swiss chard are brilliant superpower addition – just throw in a handful with mushrooms once oil is heated.
  • This dish is a great portable meal – prepare it the night before or in the morning, and bring it along for a power boosting breakfast or lunch on the go.
  • A bit of grated parmesan, or some other harder cheese of your choice, is always a yummy extra (sprinkle it as soon as you pour egg mixture over mushrooms)
  • Tip of the superpower iceberg – scatter some toasted sunflower or pumpkin seeds over the omelette just before serving!
