Hello my dear friend, welcome to Carpe Veggies!

What you see in front of you is a result of my four years long culinary journey and a new beautiful life direction. Switching to a plant based diet has never been my plan or a firm goal; it is something that had just unexpectedly happened from the inside out, and has shaped my culinary and lifestyle habits ever since.

First year of diet change brought me many positive results on a physical and mental level. However, it surprised me how difficult it was to find inspiring cooking sources for my every day routine since I don’t strictly follow only one diet regime. I am curious about and love to experiment with many different culinary directions: from superfoods and trendy, to traditional, fusion, or Mediterranean. We are blessed to live in the World full of so many various flavours and ingredients. I love to say that even sky is not the limit for what we can create with a bit of imagination and an open mind. When I role up the sleeves, my only drive is to come up with fun, creative, and easy to make nutritious every day meals.

As Romans used to say – “Mens sana in corpore sano” (a healthy mind in a healthy body)”. Food is our necessity, and the quality of our nutrition automatically reflects to all of our other life aspects on the body, mind, and soul level. Great news is that we have a full control of what we eat on a daily base, which brings us to conclusion that we are in the full control of the quality of our life on all levels.
